Greetings all! Please enjoy the
1st issue of DRF’s quarterly
newsletter. We have reached the end
of the 1st year of our ‘public sales’
operation, and my has it been a ride!
Our farm has made the paper 5
times, The Chilton Times, The
Scene, The Country Today (2x), and
The Wisconsin State Farmer.  We
tripled our cattle herd with the
purchase of a small group of
Scottish Highlands late last
summer, and found success in
providing our customers (you) with
nitrite-free pork products.  Over the
summer, we signed on as a meat
producer for the Chilton/Hilbert
School systems, and I am happy to
say, the children love it!  We are
proud to be a part of the Northeast
Wisconsin Farm to School Initiative.
Black Bart
We are grateful to all who patronized our booth at the Ledgeview Fall, Food
and Energy Fest this past September.  The young potbellied pig we brought,
Zorro, is now famous, as his photo was featured on the front cover of The
Country Today, back in October. He is currently for sale, if anyone is
interested.

rocky first year. We hope you will keep up the return business as we

Rare Breed
Corner
Midget White Turkeys are a very rare breed,
just recently brought back from the edge of
extinction. They were developed in the sixties
as a family-sized table bird, as they dress out at
between 8 and 13 pounds on average. Due to
financial issues while working with the breed,
Robert J. Smythe, who developed the turkeys,
dispersed the flock. In 1971, it was discovered
that only 6 specimens were still living. Today,
the numbers are growing steadily. They are a
tame, calm bird that is generally safe to have
around the barnyard.
In 2008, the Midget White won the Ark of
Taste award, beating out 6 other heritage
breeds, and a commercial Butterball for the top
spot. The white meat is clean and savory, and
the dark meat is very dark, and full of rich
flavor. Midget Whites are classified as critically
endangered by the American Livestock Breeds
Conservancy.  They are not related to the
Beltsville White.

Here at Dolly-Rock, 2 toms and 5 hens now
reside. If nature takes course as it should, and
our lovely ladies and gentleman mate, sit upon,
and hatch their eggs, we shall have delicious
pastured-raised Thanksgiving turkeys
available. Cross your fingers...
so.. what's next??
We have a tentative goal to
build a small store front
this summer for more
regular hours and easier
access.  We will see how it
goes.

trees again this year, and
will have
wood-fired maple
syrup
for sale. Call to put
